It all began with a chance encounter while I was a bartender at Strokers Ice House Dallas. That’s where I met a very hard working US Air Force veteran with a 12-year-old beef jerky recipe that had earned a pretty loyal following. When a popular motorcycle club member challenged my dream of potentially purchasing the recipe, I knew I had to act fast.
I drove to Arkansas, where he and his wife taught me every detail of their tried-and-true process. Armed with their guidance, I returned to Texas and took over the business. I continued to serve up jerky that quickly became a favorite among hundreds of customers and bar patrons.
I knew one thing for certain: the recipe was perfect as it was, and I wouldn’t change a thing. Today, that same authentic jerky continues to satisfy loyal fans and new customers alike, crafted with the same care and dedication that started it all.
I have always been entrepreneurial, Jesus truly blessed me with this opportunity. It also helps that I'm a HUGE beef jerky fan.

I use certified USDA beef and a unique dry seasoning process to create jerky that’s packed with rich, natural flavor—no high-soy marinades, artificial fillers, or unnecessary ingredients. Every strip is prepared using a traditional recipe, giving our jerky an authentic, satisfying taste that our customers have loved for over a decade.
Our primary offerings include generous '40 Sack' for serious snackers, convenient '10 Sacks' for on-the-go, and flavorful Dog Treats made from the excess fat trimmings (we limit waste over here). Each product created reflects my commitment to excellence, simplicity, and honoring the time-tested methods that make Mady’s Meats truly stand out.
